Rare ANCESTRAL CHILES

Oaxaca is home to an abundance of rare chiles, grown according to ancient customs and traditions. The ancestral chiles, while consumed in Oaxaca, are rarely savored outside the villages from where they are harvested.

Alma Tepec aims to deliver the flavors of Oaxaca’s ancestral chiles to consumers beyond the remote mountains of Oaxaca.

The Pasilla Mixe Chile

The first release from Alma Tepec is the most coveted ancestral chile by chefs around the world, the Pasilla Mixe (“mee-hay”) chile. It is only grown in the remote Sierra Mixe mountains of Oaxaca, 5,000 ft. above sea level. The chile is matured to a rich, crimson red in the field before it is smoke-dried in handmade earth ovens.


THE PRODUCERS

Alma Tepec partners with producers to preserve and revive the ancestral chile varieties native to Oaxaca. Without support to sow the intensive crops, the ancestral chiles will go extinct.
